Chocolate Brownies

Yup,
you read it right, there is such a thing (well at least they are as close to
healthy as you’re ever going to get when it comes to a baked Chocolate
Brownie).
Light,
moist and fudgy with no compromises on flavour, these Brownies are packed
full of chocolaty goodness without the shed-load of oil found in many brownie
recipes; most of the sweetness comes from the bananas and dairy-free chocolate and natural oils from the Walnuts although this is optional.

Medium Very Ripe Bananas peeled and mashed
250ml
Almond Milk
250g
Spelt Flour
4 Tsp.
Baking Powder
6 Tbsp.
Raw Cacoa Powder OR 8 tbsp.Good quality Dairy-free Cocoa Powder
1 tbsp.
Ground Coffee (NOT Instant)
100g
Golden Caster Sugar
Pinch
Pink Himalayan Rock Salt OR Sea Salt

Dairy-free Dark Chocolate roughly chopped PLUS 15g extra for sprinkling
50g
Walnuts roughly chopped (optional, omit if not liked)
Method
Preheat
the oven to 160 degrees C (180 degrees if using gas).
- Measure out the Almond Milk then leave tone one side. Meanwhile, place the Bananas in a small bowl and mash until smooth with just a few lumps then set to one side.
- Sift the Flour, Baking Powder, Raw Cacao Powder and ground Ground Coffee into a large Mixing Bowl, followed by the salt and Golden Caster Sugar, then stir well to ensure all the dry ingredients are well combined.
- Scrape the wet ingredients into the dry and mix until just combined, then carefully fold in the chopped Chocolate and Walnuts; sprinkle with a few chunks of chopped chocolate for extra yummiess!
- Scrape the chocolaty mixture into a prepared brownie OR cake tin and level out with a Pallet Knife OR back of a spoon. Place in the oven and let bake for 30-35 minutes.
- Let cool for 15 minutes before turning onto a Wire Cooling Rack.
Serving Suggestion
Perfect
served warm with your favourite brew OR Coffee. Also makes a great addition to
a Dairy-free Ice-cream Sundae!
