Sugar Spiced Breakfast Muesli Slice

Time is
always of the essence during the week for many of us, especially when it comes
to breakfast time and I’m pretty sure that we are all guilty of either, consulting
the store cupboard for the bland sugar infested cereal that might as well be
cardboard; a quick bite of toast and sip of coffee just to keep us going OR
skipping it entirely!
A quick
and healthy breakfast is always a tricky one, but fear not because long gone
are those days thanks to this recipe that is super simple to make! MOREISH,
MOIST, CHEWY; these delectable energy-boosting slices contain no added refined
OR hidden sugars and fats; the sweetness comes from the banana and apple which
also binds all the dry ingredients together. It was thanks to a good friend of
mine who shared this with me and I adapted it a little. The great thing about
these delectable breakfast delights is that they can be made the evening before
and enjoyed for up to 5 days so you can grab one on the go, guilty free!

Round OR Square cake Tin
Ingredients
Makes 8
thick slices
1 Mug
Porridge Oats (NOT Instant)
¼ Mug
Sultanas (optional)
½ tsp.
cinnamon
½ tsp.
Mixed Spice
Pinch
Pink Himalayan Rock Salt OR Sea Salt
1 Large
Eating Apple peeled, cored and roughly chopped
1 very
large ripe Banana
½ tsp.
Vanilla Extract (NOT Essence)
Method
Pre-heat
your oven to 160 degrees C (OR 180 degrees if you have a gas oven).
Line
the base of a baking tin with baking parchment paper (NOT grease-proof as this
will just stick)
- Add a splash of water to a cooking pan, add the chopped apples and then cook covered on a medium heat until very tender. Set aside to cool.
- Meanwhile mash up the banana, add the vanilla extract; then set aside.
- In a large bowl, add all the dry ingredients and mix well with a wooden spoon until well combined.
- Mash the cooled apple in with the banana mixture then add this to the dry ingredients; mix well until well combined, the mixture should be very sticky.
- With a spatula, pour the oaty bananary mixture into the tin and then spread with a pallet knife OR back of a spoon to level it out. Let bake for about 20 minutes OR until the edges are golden; then leave to cool completely.
- Slice into 8 even wedged and then store in an airtight tin OR large glass jar for up to 5 days.

TIP! Wrap and seal individually in greaseproof paper for extra freshness.
If time
is on your side, try this delicious alternative; Heat up in the microwave for
30 seconds and enjoy warm with a splash of plant-based milk such as Hemp OR
Almond and a dollop of Soya yogurt.
