You know when you get home from a busy day, whether it be work OR play and it suddenly dawns on you that you need to prepare dinner but have no clue what to make? I think we have that feeling most days of the week (for me it’s usually the latter end when supplies are startling to run low), well In that moment had a brainwave (hopefully a good one). I do like to have at least one hearty dinner every week that includes lots of veggies and healthy protein and one dish I love to eat is sausages and Mash Potato, BUT not just any old Mash ohhhh no-Sweet Potato mash spiked with lots of aromatic spices, Garlic and Herbs; it works so SO well; it’s a really fab alternative to any standard mash. Fragrant, sweet and aromatic, my take on Mash Potato will perk up any veg and gravy based meal as well as add even more to colour to the plate! This flavour packed veggie dish would even lend itself to a dinner party OR special occasion for sure as the spices really add another dimension.

What Will I Need?

1 x Large Cooking Pan
Potato Masher OR Fork (if you don’t have one)
Mortar & Pestle (if you have one) OR Sharp Knife
Colander
Dessert Spoon
Heavy ceramic dish OR Cake Tin lined with Baking parchment Paper (NOT Greaseproof)
Pastry brush (handy if you have one)

Ingredients
Serves 2

1 very large Sweet Potato roughly chopped with skins on
2 Cloves Fresh Garlic Crushed
1 tsp. Ground Cinnamon
½ tsp. Ground Allspice
½ tbsp. Dried OR Fresh Oregano
Pinch Pink Himalayan Rock Salt OR Sea Salt
Pinch Ground Black Pepper (optional)
1 tsp. Olive Oil

Method

Preheat the oven to 180 degrees C (200 degrees if using gas).
  1. Place the Sweet Potato in a large lidded cooking pan, cover with fresh cold water. Bring to the boil then immediately down to a medium heat; cover and let cook until the Sweet potato is cooked through, then drain and place back in the cooking pan.
  2. Add the Garlic, Spices, Salt and pepper and mash until smooth.
  3. Scrape out the Sweet Potato mixture into a baking dish then using the back of a spoon, spread evenly (I like to make a scale pattern by pressing the back of the spoon into the mixture for prettiness).
  4. Lastly, brush OR drizzle with the Oilve Oil then let bake for about 40 minutes until the top is golden.

 Serving Suggestion

I like to serve mine with Plany based sausages, roasted Shallots, Red onion, steamed veggies and LOADS of homemade Vegan Gravy! I highly recommend this to you all for sure!
