Cranachan Style Breakfast Oats

Hello! Hope you’re having a great week so far whatever you’re up too!
So, not so long ago I was chatting away to a friend at work and as usual we always end up on the subject of food (nothing changes there then!). It happened to be Burns night for her, which to those of you who are not familiar, is the Celebration of renowned Scottish Poet, Robert Burns; where friends and family get together for an informal meal of Haggis, Neeps and Tatties followed by a dessert of Cranachan in honour of this writers life). It was the Cranachan that particularly caught my attention.
Traditionally, this is a dessert comprised of toasted oats and whisky that are mixed into cream and then fresh Scottish Raspberries and honey carefully folded in to create a simple and sumptuous sweet delight.

Cranachan actually reminded me of what I like to make for breakfast most mornings (fresh fruit topped with soya yogurt and homemade muesli with a drizzle of maple Syrup) then the Penny dropped-BINGO! Why not make a plant-based version fit for a healthy and nutritious breakfast!

So here is it, my plant based version of Cranachan style oats.

Serves 1 (double for 2 people)
What will I Need?

Measuring Scales
Frying pan OR Skillet/Hot Plate
Small Bowl
Food Processor OR Blender
Measuring Spoons
1 X Medium Mixing Bowl
1 X Serving Bowl

Ingredients

30g Rolled OR Steel-cut Oats plus a little extra for sprinkling OR Homemade Muesli.

For the Yogurt

60ml Plain Dairy-free Yogurt (I use Soya)
½ tsp. Grated Lemon Zest
½ tsp. Agave Nectar OR Maple Syrup
Pinch freshly ground Sea Salt

For the Apple Puree

½ Small Eating Apple roughly chopped
1/2 tsp. Cinnamon (optional)
Dash of water

Mixed Frozen and thawed OR Fresh Berries
½ tbsp. Maple Syrup OR Agave Nectar

Method:

Heat the Frying pan/skillet over a very high heat then add the oats and toast them until fragrant and nutty-about 10 seconds. Set aside.

For the Yogurt

Place all the ingredients into a small bowl and whisk until well combined, then pour in the toasted oats and mix again, you should end up with a lovely soft cream.

For the Apple Puree:

  1. Add the chopped Apples and a splash of water to a small cooking pan, cover and cook on a simmer until just tender. Set aside and leave to cool.
  2. Pop the cooled apple into a Food Processor OR Blender and blitz until smooth then set aside.

 Finally
 
  1. Take a serving bowl OR Serving Glass of your choice, then sprinkle a few berries at the bottom, followed by half the oat and yogurt mixture and the Apple Puree; followed by the remainder of the yogurt mixture and the berries.
  2. Drizzle with Maple Syrup OR Agave Nectar and a scatter of the remaining toasted oats OR you could use Muesli if preferred.

 Serving Suggestions

Perfect with a cuppa. This also makes for a lovely cooling dessert just like the traditional version.
