Healthy Walnut, Orange and Cinnamon Spice Muesli

For me, the day does not start until I have had breakfast and a cuppa, call me a traditionalist but I just cannot adjust to the day without it!
Comforting, moreish, healthy-this muesli recipe I have created is my all time favourite morning treat, it’s so simple and delicious; the spices really give a fab depth of flavour unlike shop bought. The orange gives it a real zing, adding a little more excitement to your morning. What I love about this recipe is that it is so versatile! You can make a mean overnight oats, warming porridge OR just serve with a generous splash of plant based milk (almond is my go-to) and topped with fresh fruit and a dollop of soya yogurt.

What Will I need?

1 X Baking Sheet
Baking Parchment
Pallet knife
Measuring spoons
Large Glass Jar OR Airtight Storage Container

Ingredients

Rolled Oats (Gluten Free will work perfectly too)
Generous handful of Walnuts coarsely chopped
2 tbsp. Agave Nectar
1 tsp. Cinnamon
½ tsp. Ground Ginger
1 tsp. Mixed Spice
Pinch of Rock Salt
Zest and Juice of ½ Large Orange
Generous handful of Sultanas

Method

Preheat your oven to 170 degrees C

  1. Place baking parchment on a baking tray and pour an even layer of rolled onto it along with the chopped walnuts. Toast in the oven until fragrant and you can small the walnuts. Remove from the oven.
  2. Add all the spices and salt, mix well with the pallet knife, then add the remainder of the ingredients and mix again in a folding motion. You want to aim to create little clusters of the oats and Walnuts.
  3. Let bake for about 8-10 minutes OR until golden.
  4. Remove from the oven before adding the sultanas, then allow to cool completely; Then pour into a large glass jar OR air tight container.

Almond & Dried Cranberry topped with Fresh Raspberries, Apple & Vanilla Soya Yogurt.

The list is endless! Be sure you stir Chocolate and any dried fruits in at the end to prevent burning.
