Spiced Banana & Apple
Smoothie Muffins

OK so
first thing’s first, my apologies for not posting in like-aaaages! Although to
be fair, I have been working on some exciting recipes that I think you lovely
lot will really enjoy so hopefully all will be forgiven… *flutters eyelashes
and smiles sweetly*.
I am
super excited because only a couple of days ago, I developed my own recipe for
what I feel are the most versatile sweet treats that are not only scrumptious, but
super simple to make and healthy too as there is no added sugar in the recipe
(although if you do have a sweet tooth, you can add either maple syrup OR some
Agave Nectar) and they are literally made with homemade Banana and apple
smoothie! Soft, chewy, flavourful; with their spongy and light yet bread like texture, these muffins are
delicious as they are OR *drum roll* TOASTED!

They remind me of a teacake and
for those of you who are unfamiliar with the British Teacake, these are light
and sweet enriched buns spiked with spices such as cinnamon, nutmeg and dried
fruits; they are commonly enjoyed toasted with conserves/jam and butter.

Ingredients
2 Very
large, very ripe Bananas
1 x
Large eating Apple of your choice
2 tbsp.
Maple Syrup OR Agave Nectar (optional for extra sweetness!)
2.3/4
Cup Plain White Flour
¼ Cup
Buckwheat Flour
4 tsp.
baking Powder
1
tsp.Ground Cinnamon
½ tsp.
Mixed Spice
¼ tsp.
Ground Ginger
¼ tsp.
Pink Himalayan Rock OR Sea Salt
¼ Cup
Sultanas
Makes 9
medium size muffins
Preheat
your oven to 160 degrees fan assisted C (180 degrees C gas).
It’s
always best to prepare your muffin tin with cases so that you can get your
bakes into the oven as quickly a s possible to ensure the best rise!
- Peel, core and roughly chop the eating apple and then place in a small pan with a splash of water; poach covered on a low/medium heat until very soft. Set aside to cool.
- In a small bowl, mash the banana with a fork; then place in a food processor OR blender along with the cooled apple and pulse until very smooth. Alternatively you can mash the Banana and Apple with a Potato Masher OR Fork until you get a fruity pulp; It just means you'll get tiny lumps of fruity goodness that is equally as delicious!
- Take a large mixing bowl, sift all your dry ingredients and then make a well in the centre before pouring in the apple and banana smoothie; Mix all the ingredients with a wooden spoon until just combined; then fold in the sultanas with a large metal spoon until incorporated into the batter.
- Spoon the muffin mixture into each of the cases (about ¾ full). Let bake for 20 minutes OR until very well risen and golden, to check your bakes are fully cooked, pop a skewer OR sharp knife down the centre, if it comes out clean they’re good to go!
- Leave to cool for 10 minutes before placing on a cooling rack.
TIP!
Why not replace the Sultanas for non-dairy dark chocolate chips and/OR chopped walnuts
and drizzle each muffin with a little melted non-dairy chocolate over the top
for a more decadent version, a little more naughty BUT delicious!
Serving Suggestions
Personally,
I think these muffins are best sliced in half; toasted and served up with a
drizzle of Maple syrup and a good old-fashioned cuppa! They’re also delicious
as they are of course! However you choose to eat yours, let me know what you
